Skip the (canned) cranberries

Kathina Pinckert, training specialist II, Correctional Managed Care, shares an old family recipe for a festive salad.

“I’m sure there are similar or maybe same recipes out there somewhere, but this one was passed down to by my great aunt,” she says. “The kids even love it. We love to top it on turkey and/or dressing or enjoy as a side dish. Before serving, I like to mix it with a spoon; it's a very pretty dish.”

Cranberry Salad

Ingredients

  • 1 cup chopped cranberries (fresh)
  • 1 cup sugar
  • 1 cup pineapple juice
  • 8 ounce-can crushed pineapple
  • 1/2 cup chopped pecans
  • 1 cup chopped celery (small pieces)
  • 1 box cherry Jell-O

Directions

  1. Chop fresh cranberries in a food processor or blender into tiny chunks.
  2. Pour 1 cup of hot water over Jell-O in a bowl to dissolve.
  3. Mix all ingredients in a bowl or dish, whichever you prefer. Refrigerate overnight to gel.
