Mediterranean diet: Olive oil has benefits

In this week’s column by UTMB’s Dr. Victor S. Sierpina: Multiple medical studies have shown the Mediterranean diet to be highly protective from heart disease and cancer. It is anti-inflammatory, high in antioxidants, fiber, whole grains, fruits and vegetables and health proteins such as beans, fish and lean meats. What most characterizes the Mediterranean diet, however, is that it uses olive oil as its primary source of fat.
