About the UTMB Food Safety Program

Each year, one in six Americans get sick from eating contaminated food.  UTMB Health takes the quality and safety if its food seriously, and has implemented a Food Safety Program designed to ensure the food provided on campus property is safe to eat for all faculty, students, staff and patients.  Working closely with our vendors, rigorous food safety standards have been developed to ensure compliance with Texas Food Establishment Regulations, ServSafe Program, and the National Fire Protection Association requirements.

Pre-operational as well as periodic food safety inspections are performed by or under the supervision of a Registered Sanitarian at all UTMB food service and preparation locations.  Results are communicated to our vendors so that they are aware of their programmatic strengths as well as identify areas for improvement.  State of the art methodologies to assess food safety, including ATP testing, help ensure the highest quality of food served at UTMB.
